What I like the most about this is how real it is. It's just a pure expression of agave and the environment where it was produced/fermented. It's exciting to see products like these come to the market, and to see there are people out there who can enjoy them. This is a rustic product, so if you're expecting something overly filtered, watered-down, safe, clean and neutral, this is not for you. But for those who want to take a walk on the wild and real side, it's an adventure. Aroma: Earth, citrus, olive, cooked agave, hay (something I tend to get when fibers are used in the fermentation), butter, wet cement, and cinnamon after you let it open up for a while. There's also this "creamy" thing to the aroma, which is a weird description but it's the best I can do to describe it. Flavor: Vegetal, earthy, cooked/burnt agave, and smoke (likely resulting from the burnt agaves lining the very bottom of the oven which came in contact with the flame). Finish: Dry! Jalapeño, earth, and more cooked agave. It lasts a while and evolves nicely, so don't rush and pay attention to all that it gives. I'm grateful that a product like this exists, and even more that I got a chance to try it.

Love this, earthy, herbal, citrus, amazing Mezcal like agave spirit. Special 12 batch blend, made out side the CRT guide lines. Absolutely love it, had the opportunity to taste this off the still at 64.5 ABV. That was of the charts. Salud

Earthy with strong vegetal notes. Lots of mint and cinnamon. Agave level is good even if it's pushed to the back a little. If you like this flavor profile this is a winner

Cazcanes nuestras raices First try (neck pour) was pungent and funky, more like a mezcal to me. Three days later, I'm revisiting, and it isn't as mezcal forward as i originally thought. I let it sit 20 mins to open, and the nose is more barnyard, hay and briney, with a punch of mint, than funky mezcal i got the first night. Palate is interesting. Very different. Some pine, like i get with a lot of mezcals and barnyard/hay and mint follows thru toward the end, with a fizzy, spicey finish. I understand why some would enjoy this. I'm giving it mid 80s because I appreciate it as a quality agave spirit, tho its not my profile preference.

This stuff is awesome! Super earthy and vegetal. I get a ton of raw pepper, black pepper, grass, minerality and earthiness on the nose and palette with a delicious lengthy finish that leaves you wanting more. Really complex. I was also able to try it at over 120 proof and that was legitimately some of the craziest/delicious stuff I’ve ever tried. Love that they went back to their roots to produce it in “the jungle”.

Wow this is a fantastic high proof with a very unique aroma once you pop the bottle open. This is something special. You wouldn’t know this was 47% as there is no burn. Nose: cooked agave, Earthy, vegetal, grass, brine, minerals, grapefruit, and cinnamon. Palate: cooked agave, Earth, vegetal, grass, black pepper, citrus, cinnamon, mint, brine, and minerals. A great long finish with a nice oily viscous mouth feel. Truly a very special bottle.

Nose: Earthy up front, it lets you know that it came from the ground. Sweet agave sits at the core while light smoke rolls in quietly. There is a distinct salinity and a raw vegetal quality that makes itself known. A touch of burnt sugar hangs in the background. There’s also a slight malolactic character - it’s just enough to keep things interesting without throwing anything off. Palate & Mouthfeel: Sweet agave leads the charge - it’s clean, clear, and not dressed up. Earthy and green (like raw vegetal) notes come next, with a flash of citrus that gives it some lift. Anise and black pepper show up late and keep it grounded. Mouthfeel hits the sweet spot, neither thin nor syrupy. Just right. Finish: Medium finish. The black pepper and citrus bitterness linger, with the agave and earthy tones slowly fading out. Warm, clean, no bite. Final Thoughts: The flavors are honest and sharp, the production is old school and gritty, and the whole thing drinks like it was made by people who actually give a damn. And yes - the shredder is powered by an old Chevy engine.

Nose: Earthy, vegital, light smoke, sweet agave, brine, molasses sugar, a little funk, Pallet: Sweet agave bomb, earthy, grassy, mint, grapefruit, cinnamon This is INSANE! Wow, flavor packed. Delicious in every way. Humberto is the GOAT. This spirit is bold, it’s loud, it’s unapologetic. It’s without gimic, technology, smoke and mirrors. It’s ALL heart, soul and magic. I’m super blessed to have a bottle of this and I’ll be cherishing it for a long time

Simply spectacular in every aspect from the moment the bottle was opened and poured. Pungent, aromatic with a very macho bouquet of agave, the terroir, the cooking space, the water from the spring and the ABV. Super strong in the mouth, just grabbing the tongue and cheeks as you taste the agave you smelled at the first whiff. Sweetness is all present and then as the initial taste fades a very solid vegetal/mineral taste fades to some bitterness. I really like it a lot.

Super Cazcanes! Hint of smoke, tastes like cooked agave straight from his “autoclave” home made ovens! Juicy, mineral rich, bright, citrusy, has an almost effervescent tingling sensation on the finish that just keeps going. $110 for a small batch distillado, produced in the middle of nowhere, you’re grabbing a piece of authenticity at a solid price for such a special edition bottle. Am I slightly biased because I’ve been to the still site and got to meet Don Humberto and see it first hand? Sure, I suppose so. Say what you will about Cazcanes, but this is a special bottle and to see it go from a dream to reality and knowing that there’s a man/agave farmer/tequilero who made this become a product that people around the world can enjoy is special.

Really delicious. Earthy and a little funky. I’ve been out to this location multiple times and it’s always special to see Humberto working and the set up. I’m glad they brought this to the market.

Aroma: cooked agave, minerality, green bell pepper, tropical fruit, vegetal, dried brush, herbal. Flavor: cooked agave, vegetal, earthy, asparagus, bell pepper, herbal. At 47% there is hardly any burn but the texture is soft and oily.

On the nose it’s earthy with a slight smokiness and vegetal. The pallet starts with cooked agave, minerals, and black pepper. The finish doesn’t hang around long, but gives hints of green pepper and a slight sweetness.

Nose: isopropyl, mint, Mouth: light, palate cleansing, slightest sting Palate: interesting! There’s a lot going on. Finish: the exit has a nice dry pucker factor that brings you back for more. The bar served this in a chilled glass and I think it’s muting the nose. I’m going to wait and retest.

COLOR: Crystal clear with shards of silver in the light AROMA PROFILE: Deeply sweet agave notes, a kick of minerality (stones alongside a fast-running creek) & salinity, vegetal notes (green bell pepper, freshly cut grass, eucalyptus), herbal notes (basil & mint), honeysuckle, fresh lime & grapefruit peel/zest, sweet cinnamon, light cloves, & white pepper – Super earthy profile.
