NOM 0 | Pretty wild stuff here! On the nose it smells like Parmesan cheese, a little anise, mint…it’s all over the place but it’s awesome. Palate I get sweet cooked agave, honey, herbs, tons of green veggies. Finish is funky, delicious with black pepper and a hint of sweetness. Highly recommend for the experienced agave spirits drinker!

Nose: Cooked Agave, Earth, Butter, Hay, Cream, Corn, Smoke, Mineral, Mildly Lactic even. Mouthfeel: Medium- bodied Palate: butter, cooked agave, mineral, black pepper Finish: Coconut, Cooked Agave, Black Pepper, brine, Vanilla This kind of blew my mind. The agave was SO prominient here. So full and rich in every aspect from the nose to the finish. Not disssimilar in my opinion from The Fuenteseca Coseca 2018. This was not merely a spirit, this was a celebratiom of agave.

Nose: agave / smoke / earth / pepper/ hint of lime / hay / tea / sage / mineral Taste: sweet agave / vanilla / pepper / cinnamon / banana/ apple / peach / lime/ anise / spearmint / hint of smoke Finish: very clean watery mouthfeel/ some smoke holds through the taste but it’s mostly agave, vanilla / cinnamon that lingers on This chato 46 has just the right amount of smoke and bolder flavors (from high proof) to make you a beliver in using non- standard practices and ingredients to create something delicious. It’s not exactly tequila…technically, but the flavor makes you not care.

Another fantastic expression coming out of the Los Valles region from El Caballito Cerrero. The influence of Mezcal is prominent in this agave spirit, so to those who prefer tequila’s flavor profile be prepared! On the nose cooked agave, smoke, white wine, and musky. Pronounced flavors of cooked agave, smoke, spice, vegetal notes and other minerals on the palate. Long and dry finish.

Love this bottling from Cabillito, fresh cooked agave notes dance on your tongue. Very balanced, citrus, agave, pepper, light heat all come together in this glass. Can’t say enough.

B - 111 46% ABV Chato (angustifolia) Unfortunately other bottle info stamped on inside of back label is not legible. Initial nasal impact has a nice prickle from the 46% ABV. Aroma is sweet cooked agave, mineral, jackfruit, earth, wildflower honey, vanilla bean and olive brine. Oily mouthfeel with generous heat. Fresh fennel bulb, cinnamon sweetness, wildflower honey, caramelized cooked agave make up a nicely complex flavor. The long finish carries on highlighting fennel, cinnamon and a bit of a lactic note. Incredible blanco from Cabillito Cerrero. Love how they stand up to the CRT by carrying the Destilado de Agave designation so they don't have to be pigeon holed into a category based on CRT regulations. When you find them, buy them. Pure genius, brilliantly done.

Humid roasted agave off the nose, very unique and inviting, makes me think of Mexico. Some elevated sweetness that is a bit much for my taste but this is an excellent Tequila (agave spirit, whatever).

A little different flavor profile than your standard Tequila but very appealing. A little smoke, fruity, cinnamon. Nice combination of flavors that work well together.

Magnificent! Any CC expression will be of great quality. If you can do a side by side with Azul Blanco, both really enjoyable

Wow. The taste is more mezcal-ish. But really good cinnamon agave taste with some smoke and tangerine. Very different. But so good.

Starts with herbal, citrus and vegetal aromas coupled with a sweet green olive brine. Across the palate, a nice mouthfeel that has even more of that sweet and mild green olive, with a finish that hits with a punch of spice, agave, mint, and black pepper that lingers with a pleasant heat from the 46% abv. An excellent agave distillate that is not easy to find, but well worth enjoying.

Unusual, vegetal, green olive nose. Flavor bursts on the palette like a firecracker of black pepper, sweet agave, cinnamon. Definitely taste the 46%, and numbs the lips but balanced all the way through. One of the longest and tastiest finishes ever. Thick and slick mouthfeel, as with all Caballito Cerreros. A somewhat challenging, but extremely memorable spirit.

Color label. It was amazing. Probably the best blanco I’ve had.

Tasted at the distillery December 2019. This is really good and different than the azul. I like the azul better than the “chato”. But this has lots of great flavor.

Cooked agave, smoke, grass, well water, cinnamon, minerals, citrus, lime, tropical fruits, celery, mint and rosemary. Palate includes all the aromas plus tangerine, melon or mango. Finish is warm medium , sweet, lite bitterness, barrel spices, cinnamon and little pepper. IMHO one of the three best blanco I like as of 4/2021.

Cooked agave for days although different to blue agave. However, it is also very mineral and earthy so it balances. The higher ABV version is my favourite as I find the flavours to be intensified.

A real treat. Agave forward with nice heat. high proof really comes through to make this a fantastic sipper. The aroma on this is just phenomenal.

Aroma: Spicy cooked agave - almost like chewing on a piece of agave, it is so vivid. Slight mushroom straw funkiness. Aroma of jackfruit. Mineral effervescence. Floral and herbal notes, cut grass. Green olive. Flavor: A potent pepper and ethanol blast of heat - but carrying fruit, spice, and sweetness as well. Light vanilla and cinnamon fade in and out. This leaves some fire on the back palate and esophagus. Not real viscous. Finish: A little hot and kicks like a burro. But what a ride.

Inside rear label says Batch 01. The Agave Angustifolia, colloquially called Chato provides a different nose than the Agave Azul that is also produced and bottled at Fabrica Santa Rita. Nose has some earth and mineral elements carried by the 46% ABV. On the palate it is easy to sip with earth, grass, roast chato and surprisingly a mild alcohol experience for the higher ABV. Some nice sweetness that lingers as the finish fades.

Nose : Smells minty , smoky and minerals Taste : initial anise , slight citrus into a viscous oily smoky terroir , and ends smoky . Taste very close to a mezcal , great intro before getting into strong mezcals . Slightly high on price .

Floral and vegetablesnose with earthy gamey agave. Taste- Smokey buttery agave with cinnamon chile sugar on top with a fizzy/tingly finish.
