Nose: Cooked agave, caramel, vanilla, baking spice, butterscotch; hints of pepper and oak. Palate: Caramel, vanilla, black pepper, subtle cooked agave, oak, butterscotch, baking spice, and buttery texture. Finish: Smooth with lingering caramel, vanilla, and crisp agave! I love Volans’ single barrel program! They have some of the best SIBs with subtle aging that lets the agave shine! Total Wine (Willet Barrel) is a 94 for me, and the rare tequila SIB is a solid 91. Overall, great tequila out of 1579!

Nose: Agave shows itself right away, clean and steady, with a caramel apple roundness that adds a tart warmth. The oak follows with a seasoned edge, carrying a touch of barrel spice that feels well integrated. Underneath it all sits that earthy, mineral layer, keeping the sweeter tones in check. Palate & Mouthfeel: The texture lands in a true medium - enough presence to hold flavor, without leaning silky or heavy at all. Barrel spice arrives first, pulling cinnamon, pepper, and vanilla with it. The agave is there but plays behind the oak, which clearly takes the lead. A flicker of chili pepper and a squeeze of lime brighten the mid palate, while the minerality from the nose quietly returns and adds a bit of structure as it moves along. Finish: Oak carries through on the finish with a slightly savory tilt, joined by cinnamon and a soft touch of vanilla. It lingers at a comfortable pace, staying flavorful without turning sharp or drying. Final Thoughts: It’s a well made tequila with clear craftsmanship behind it, though the oak and cinnamon lean a little heavier than my palate typically leans toward. Still, the quality is unmistakable.

Barrel: G-25 / 43% ABV / Trevor’s Liquor SiB This was a really enjoyable pour. Clean, flavorful, and very true to the agave while still showing off the barrel’s influence. On the nose, cooked agave jumps out first, layered with smooth vanilla and a touch of oak. Black pepper adds some brightness, while citrus keeps it lively. Earthy undertones and a light dusting of cinnamon give it depth, and the minerality ties everything together in a crisp way. On the palate, the cooked agave shines again, balanced by oak and black pepper. There’s an earthy backbone that grounds the flavors, with vanilla and cinnamon adding warmth. Citrus notes lift it up just enough, and the minerality carries through into the finish, leaving it clean and refreshing. Overall, this single barrel repo feels refined and well-structured. It’s got enough complexity to keep you coming back, but it stays easy to sip and very agave-forward. A thoughtful selection that highlights both the spirit and the barrel in balance.

Vessel: Chisholm Trail Jarrito Nose: Grass, Earth, Carmel, Oak, Chocolate, Plum, Leather Palate: Grass, Cinnamon, Chocolate, Butter, Nutmeg, Hint of citrus Finish: Toffee, Honey, Grass, Oak, Dried Fruit (Raisin) I assumed this one would be over hyped with all of the talk about it and the large price tag. I enjoy this just as much as any XA from El Pandillio but not significantly more. I got the minerality and grassy notes that I am used to from 1579 along with with the Carmel and Honey additions you'd expect from an XA. This was enjoyable! Overhyped? No. Overpriced? Probably for me personally. Great juice! The score was affected by the price tag. otherwise, I'd put it up there with Terralta 5 year XA and Don Vicente XA.
