Hay, lemon, grapefruit, and a faint thread of black tea bring both brightness and depth. On the palate, a sharp, grapefruit-like tang is accompanied by cooked agave, earthy tones, and a hint of passion fruit. There’s a soft vanilla buttery texture that quickly gives way to a burst of anise, delicate florals, and a lemon custard note/ lemon cake adding a sweet creamy contrast. Salinity and a hint of smoke weave through, with a green pepper spice that clings. The lemon citrus grows increasingly intense, adding a final burst of bite. The finish is quick, with a clean, gin-like echo that lingers on the tongue, accompanied by a refreshing touch of mint. Complex, vivid, and layered. I need two more bottles.
