The aroma opens with green apple, faint minerality, followed by hints of pineapple and a restrained ethyl snap. A gentle grassy undertone provides freshness, while upfront sweet vanilla leads the profile. On the palate, bright and citrusy pineapple arrive first. Rum cask spices adds warmth, highlighting notes of sweet cooked agave, earthiness, and vanilla. Fleeting hints of wintergreen appear throughout, also contributing a minty, sweet and woody nuance. The finish is fading spicy citrusy zest and lingering sweet wood, that gradually mellows away. What stands out most is the balance between freshness and warmth. The tropical fruit and citrus keep the profile crisp and verdant, while the spice, vanilla, and subtle wood influence provide depth.
Nose- great barrel influence on the nose, banana, fruits caramel all backed up with light cooked agave. Finish is nice with lingering tropical notes.

Wow, this is really well done by Yeyo, Sergio Jason and crew. This started at NOM 1414 with Yéyo’s already super clean highlands profile of cooked agave, citrus, minerality, floral notes…Then they took it into Columbian Black Strap molasses rum casks for 11 months before finishing it in Willet bourbon barrels. I got this wild tropical brightness that almost shouldn’t work in tequila… papaya, banana, melon, molasses, caramel… but somehow it still drinks like tequila instead of anover-oaked bomb. The bourbon finish rounds it out without burying the agave. It’s super clean, I think I used the word “elegant” when sipping it. An amazing tequila for a great cause. I can get behind that!
Nose: Caramel, green apple, & banana Taste: Molasses (a burnt caramel and cocoa with a slight bitterness), citrus peel, barrel spice, & oak. It’s creamy/chewy with a nice finish. The rum barrel has a big impact on the profile. It’s a beautiful after-dinner treat. Most importantly, this is a charitable effort to fund improvements to the Francisco Rojas Gonzalez school in Arandas through the Tequila That Cares Foundation.
