The process description says charcoal filtration. Unusual for a Blanco. It takes away some of the flavor characteristics.

Vessel: Glencairn Nose: Carmel, Honey, Almond, Cinnamon, Honeysuckle Palate: Vanilla, Cream, Carmel, Toffee, Orange Finish: Citrus, Honey, Oak, Chamomile

Aroma: It's heavy with Oak, Vanilla, Caramel and Cinnamon! Then the agave shows up... You can certainly pick up a few Whiskey Notes with Stone Fruit and Cherry. After opening up for 10 minutes, I can pick up some Chocolate and Hazelnut notes. There's a lot going on with this! Taste: Immediately Oak and Vanilla are tasted. The Caramel and Baking Spices mingle in with the Agave, which is present, but not the star. The Stone Fruit and Cherry reminiscent in a bourbon are here too. There's a light oily soften butter that coats the tongue nearing the end. Finish: The Sweet Cherry and Cinnamon hold on for 10-15 seconds like many easy drinking whiskeys. Again, this would be a great pour for the Whiskey lovers out there! The Agave certainly isn't the star, this allows for the Barrels to shine!!! TMM 84

3rd Night: Initially the aroma had a lactic sour milk tone I noted on the first night, which has diminished by the second night. Present is a musty funk typical of some Reposados, along with hints of berry, light vanilla, maple, faint woody tobacco, oak, subtle floral notes, and alcohol. The minerality is less pronounced compared to the Blanco. The taste has an overt spiciness with maple, accompanied by prominent alcohol, medicinal tone, cinnamon powder, whiskey and a subtle coating of brine on the tongue. However, the delightful minerality found in the Blanco is not as outstanding here, and the agave lacks distinction. The dry down reveals oaky sweetness, along with slight metallic notes and alcohol undertones, which are palatable. A lingering tingly pepperiness persists on the back of the palate. *Updated my score from 71 to 79 after letting it sit for a week the taste has become more delectable while the aroma is more satisfactory. *Updated: 79 to 81
