    “Aroma: Earthy Cooked Agave and Cinnamon meet you immediately. Vanilla and Caramel are more forward than Oak, but all are present. Being familiar with Tobacco barns, there is a distinctive Tobacco and Musty quality that I just love! A touch of Herbalness reaches out as well. As this opens up over time, the Barrel influences become apparent with nice Baking Spices and an accompaniment of Cocoa Nibs. And a touch of Dried Fruit reaches out. Taste: Sweet Agave meets Vanilla and Caramel at the door! The Oak influence from being in the Barrel brings a nice Spice of Cinnamon, Nutmeg, and other Baking Spices. An abundance of Citrus is also available. The Herbalness from the nose carries over to the taste, along with the Dried Fruits of Apricot, Fig, And Plum. Finish: A very nice Medium length run of Sweet Agave runs with a Lingering Spice of Cinnamon and Baking Spices. ”

    “ Aroma: A massive amount of Rich Cooked Agave greets you immediately! A distinct Earthiness and Minerality abound as well. A candy-like Red Hot Cinnamon mixes with Black Pepper to showcase a spiciness. There is also a ton of Citrus notes that offers a mix of Orange and Lime Fruits. An Herbalness of Spearmint, Anise, and Sage combined with freshly cut Grass gives off the Green Notes. As this opens up over time Tropical Fruit Notes are accompanied by Honey and Haybarn. Taste: This starts off with a Super Sweet Agave blending with the same Red Hot Cinnamon Candy notes. There's also a blast of Orange Citrus. The Spearmint and Anise come along from the Aromas. Pineapple and Mango offer their Tropical notes. Grassy notes both fresh and dry are a part of the flavor. Finish: A long Sweet and Spicy ride with the Agave Front and Center! AMM--90 Salud!!!”

    “Aroma: Soft Sweet Cooked Agave accompanied by Vanilla and a nice Creme Brule and Toasted Caramel. Baking and Barrel Spices also very present. Orange Zest and Cinnamon with Plum and Apricot. Nice Minerality. A punch of Hay and Cantulope. Taste: Sweet Cooked Agave with Barrel Spices, Vanilla, Caramel, Butterscotch out the gates with a Creamy Buttery notes. Baking Spices and Dried Fruits. Whisky comes through along with some Tropical Fruits. Funish: A blend of Tequila and Bourbon Notes equally. ”

    “Aroma: Cooked Earthy Agave greets you with a heavy Cinnamon Spice following. A very present Minerality. As this opens up, Spearmint comes through. In the top of the Glass a touch of Floral notes and Haybarn. Taste: Cooked Agave is at the forefront. An Earthiness is also here along with Spicy Cinnamon and Black Pepper. Citrus is very noticeable. A bit of Vegetalness with Herbals of Mint and Anise. Finish: A long Lingering Spicy Cinnamon and Black Pepper Finish that is definitely still full of Agave.”

    “Tasted from Sample Sent by Keith Bogart in High Proof CTC Glass. Aroma: off the bat, Rich Cooked Agave, followed by Vanilla, Oak, and Cinnamon. As it sits in the glass opening up a nice light Curing Tobacco note enters the picture. An Herbal and light Mint also enter the fold. Citrus and Fruits become a part along with a touch of Hay Bales. Taste: Agave and Very Identifiable Vanilla start this off. Definitely barrel influence from the Oak and not manufactured from additives. Caramel and Spicy Cinnamon let you know there's a sweet heat to this higher proof. The Oak is mild, which is a nice surprise. A touch of Citrus Peel mixes with a punch of Herbs and Mint. And there's a sweet Fruit finesse that hangs around. Finish: Very Nice Sweet/Spicy Agave and Vanilla ride”

    “Aroma: This isn't driven by Agave, although there,, the presence of the New American Oak is the dominating force behind this Añejo. Oak, Vanilla, Butterscotch, and Caramel show off the long aging in the new barrels. Additional Stone Fruits like Plum and Apricot are also a major part of the nose. As this opens up Citrus and Tropical Fruits immerge. Cinnamon and Barrel Spices also come out. There is also a Buttery Custard the softens this. Taste: Again the Barrel Influences of Oak, Vanilla, Caramel and Butterscotch definitely give off Whiskey like vibes. The slight difference being that there is still a touch of Agave still present. Cinnamon, Black Pepper, and Baking Spices add the Spicy touches too! Citrus and Stone Fruits add a nice sweetness along with a touch of Honey. Finish: The finish runs long with Oak and Spices. The flavors of Don Pilar Añejo resembles a Tequila wrapped in a Whiskey Blanket. There is a kiss of Agave here to remind you that this is still Tequila. But it will definitely appeal to a convert trying to get into Tequila on their new journey. It will also appeal to anyone looking to sit down on a cool evening and sipping something that will continually evolve in glass. The price point around $45-50 makes this a great choice for the collection! AMM--86 Salud!”

    “Aroma: Super Rich and Sweet Cooked Agave starts this off! And Super Rich it is!!! There's a bit of Mint that precedes all the Minerality this exudes. A good amount of Citrus is here. Cinnamon and White Pepper mix for a nice rounded spiciness. A sweet Honey mixes with Creamy Butter to soften the Herbal, Eucalyptus, Vegetalness, and fresh cut Hay that follows. There is also a touch of Earthiness for good measure. Taste: Again, there's a greeting of the Super Rich and Sweet Agave! The power of the Aromas is met with a finesse on the taste. Floral, Fruity, and Citrus notes hit before a touch of White Pepper. These flavors are then combined with Vegetal notes mixing with Mint, Thyme, Sage, Tarragon and freshly cut Grass. The Minerality present is amazing as well. Finish: The finish is very long and lingering with the Sweet Flavors combining with the Pepperiness. ”

    “Tasted in CTC HP Jarrito Aroma: Incredible Cooked Agave, Dry Hay, Minerality, Cinnamon, Baking Spices, Citrus, Mint, Old School Notes, Floral and a touch of Vanilla. Taste: Sweet Cooked Agave, Sweet/Spicy Cinnamon and White Pepper, Fruity, Citrus, Minerality, Light Earthy, reminiscent of an Old School pour! Finish: Agave, Cinnamon, and Fruity for a long Spicy ride!”

    “Aroma: Agave intensity abounds, accompanied by the scent of lime. Herbal notes of thyme and sage are present, surrounded by sweet vegetalness. Cinnamon and white pepper add spicy touches, while olive brine provides a subtle salinity. After a few minutes, the aroma of flowers becomes apparent. Taste: Sweet, cooked agave is the star on the palate. Cinnamon and white pepper work harmoniously to offer a pleasant spiciness. The lime scent carries over, providing a citrus punch. A combination of vegetal, herbal, and fruity notes is present, including olives, thyme, sage, and honeydew melon. A nice minerality and creamy texture are also notable. There is also a balancing Floralness that gives this a Finesse to counter all these other Powerful flavors. Finish: The finish is long with Agave and Spice! This is the second time over the last 5 months that I have tasted this at the 106 Proof mark and it has been consistently delicious! When the Salvaje becomes available, it's another High Proof to add to the collection! ”
