This was a fantastic pour. Bright, bold, and incredibly expressive. It feels like a perfect evolution of the Lalo profile, with the higher proof really amplifying the core agave flavors. On the nose, the cooked agave jumps right out, earthy and rich, supported by notes of brine and green olive that give it a savory edge. There’s a vegetal and herbal character that feels fresh and natural, lifted by citrus and a touch of black pepper for brightness. On the palate, the cooked agave takes center stage again, backed by brine and olive for that signature savory note. Herbal and vegetal tones keep it vibrant and clean, while black pepper adds some bite. Citrus gives it a refreshing lift, and a hint of anise on the finish brings a subtle sweetness and spice that lingers nicely. Overall, this is a beautifully crafted high proof blanco that stays true to its roots while delivering extra depth and intensity. It’s a standout for flavor, balance, and authenticity, and one that really rewards slow sipping.
