Agave, earth, lemongrass, limestone and anise aromas. Cooked agave is big on the flavor and finish, as I have come to expect with Cascahuin. Flavor also has earth, black pepper, brine, and mint. Overall an excellent product, at 46% abv, it’s still easy to drink.

Nose: The nose opens with cooked agave and a bold hit of cracked black pepper. There’s a distinct salinity that adds depth, while delicate floral notes, reminiscent of white blossoms - give it a light, aromatic lift. Palate: On the palate, it delivers a balance of cooked agave and black pepper spice, with a silky, medium-bodied texture that coats the mouth gently. Honeyed undertones add richness, while a touch of citrusy orange peel brings brightness and lift. The mouthfeel is smooth, with just enough peppery warmth to create a subtle, lingering prickle that enhances complexity without overwhelming the senses. Finish: A smooth, medium-length finish that lingers on with a light pepper heat, and a faint echo of citrus zest. It’s clean and well-resolved, leaving the palate refreshed and ready for another sip.

Tasted at Agave Bros 2025 Blanco event. Very nice single estate Cascahuin 1123 product which continues a long string of amazing releases. Some earth and minerals, nice viscosity and some great naturally sweet roast agave notes.

Nose: Black and white pepper with a juicy character. Thick body. Palate: Medium body. Pepper up front which delves into a beautiful sweetness and ends in hot spicy pepper. Finish is long but a little hot. Quality sipper. A little hot for a 46%er but definitely good.

Lagrimas sabino aug 2024 From samples Tom gave me at his tasting a couple months ago Blanco - Nose: at first i got minerality, vegetal, agave, pepper, as it opens I got some fruit and more agave, a little anise, hay Palate: cooked agave pepper anise and something I can't identify. Also a mild bitterness Finish: medium warm with anise on the end Overall: I like it. Good viscosity. Not sure how I rank it against the other 2 vintages. At some point I'll do a side-by-side value bumps this up a couple points @ $64 USD

Goodness! Getting to the end of this bottle. So so good. Amazing nose! Pure bright clean eye-opening agave. The flavor is clear nose tingling super fresh minty mineral agave. More of that lingering through a long finish. Next level. 2 extra points for value on this.

Nose: cooked agave sweet / earth / brine-salt / pepper/ citrus -grapefruit/ hay / minerals Taste: sweet agave !!! / cinnamon/ pepper/ apple / citrus-orange peel / lemongrass/ peppermint / brine/ cream soda Finish: sweet agave bomb / the pepper taste leaves abruptly to create an enjoyable bittersweet clean wet and watery mouthfeel that allows the flavors to fade quickly but in a memorable way This plata has so much sweetness that turns to a bittersweet blanket that wraps your palate and makes you not concerned with the other flavors. The sweetness and the low viscosity mouthfeel work together to bring a smooth sweet memorable pour.

1123 just seems to slay everything they make! I tasted this blind and the higher proof was well hidden. N- blast of agave, fresh herbs, lemon, white pepper, wet earth T- whoa. Cooked agave, minerality, more fresh herbs, seeded jalapeno, lemon rind MF- medium body F- medium in length and everything dissipates at just the right moment V- $65 in Michigan makes this a decent value considering how much this made my mouth happy

Beautiful nose of agave, earth, and citrus. I get a touch of anise and minerals. So complex with flowers and mint and vanilla. Beautiful nose. Taste is first and foremost sweet with cooked agave. I get anise. Vanilla is also prominent. It also has an earthiness and vegetal vibe. This is an excellent tequila and worthy of your consideration.

1123 usually can’t do anything wrong in my book but this plata wasn’t the one for me. Too much ethanol and vegetal on the palate. I will definitely revisit this again.

2nd night: The aroma presents a familiar array of scents, including cooked agave, anise, and minerality, which set the foundation for the olfactory experience. Subtle undertones of cooked sweet potato, citrus, and peppermint add depth and complexity, while a interplay of light ethyl and alcohol notes, alongside hints of vinegar and olive, contribute to the overall aromatic profile. On the palate, bold notes of anise and minerals take center stage, providing a robust flavor foundation. Flashes of butterscotch and cooked sweet potato add layers of richness, while the presence of peppery ethyl and an alcohol note inject a subtle warmth and intensity to the taste. Additional nuances of berry, bitter dryness, vanilla, and candied peppermint emerge, contributing to a multi-faceted palate profile. The finish unfolds with a fading pepperiness accompanied by vegetal undertones and a subtle dryness that adds depth and texture to the overall sensation. The clinging delicious minerality serves as a final reminder of how much I enjoy tahona crushed agave.

Nice bright agave nose. Signature cascahuin. Long legs on the glass. Easy going palate with not a ton of flavor but turns into a sweetness on the finish with a lingering heat and a slight bitterness but not with every sip. It’s nice but doesn’t dethrone Palo Verde.

The third Lagrimas tasting of four. Although it was not my favorite of the bunch, I preferred the 2022 Palo Verde & El Chiqueño just a hair more, I still have nothing but praise for 2023’s El Sabino. This year’s installment in the Lagrimas line is a charming agave forward sipping experience with subtle vegetal, herbaceous, and earthy notes to uncover with a mineral backdrop. A noticeable anise and mint is present on the nose & finish. Upon second tasting I found that I enjoyed El Sabino Blanco even more than my initial impressions. In hindsight, it goes toe to toe with the previous two Lagrimas editions. I’ve gotta say I’m impressed, this relatively new Lagrimas lineup is looking like a serious player in the industry & I can’t wait to see what’s next.

This one has a great nose. Very vegetal, mineral rich, and with an excellent balance of fruity, floral and citrus notes. A little bit of funk on the finish, too, which is unexpected. Maybe that will dissipate as the bottle opens up. As always, Another win for Lagrimas Del Valle!
