Conditions: 73 degrees, calm air, resting in Kenzie glass for 35 minutes Appearance: silver pale shimmer, spacious defined legs indicating possible sweetness and higher alcohol Aroma: light, bright and forward raw agave, citrus and white pepper, with fresh herbal elements— marjoram, mint, Thai basil. Taste: Initial sweet pepper and cooked agave with a pleasant thick mouthfeel. Mid palate pepper remains though missing the spectrum from the aroma. A mellow sweet chamomile tea with honey echoes on the finish which I would call medium. A stalwart expression that sips sweetly and modestly and would shine for the mixologists.
