“Aroma: Caramel and barrel spice lead the way, with cooked agave still coming through underneath. Really inviting nose that leans into the barrel without losing the agave. Palate: Caramel up front, followed by cooked agave and baking spice. There’s a hint of vanilla and dried fruit that adds some nice layered sweetness and depth. Finish: Long, clean finish with oaky warmth and a lingering sweetness that sticks around in a good way. Overall Impression: Beautiful nose and really nice layered complexity on the palate. Another fantastic aged expression from El Ateo. Super pumped I was able to pick this up at El Búho.”

“Aroma: Bright and clean on the nose, with cooked agave up front and a subtle cherry note layered in. There’s also a touch of wet earth and clay that adds depth. Palate: Cooked agave carries through with a slightly savory, nutty edge. Citrus keeps it lively, while hints of mint and light chocolate add complexity. The mouthfeel is silky with great viscosity. Finish: Long and smooth, warming with spice and citrus. It lingers with touches of pepper, baking spice, and minerality. Overall Impression: This is a very approachable blanco that still offers depth, and one I’d happily revisit neat.”

“Aroma: I’m getting cooked agave right away, backed by fresh herbs and citrus zest. There’s noticeable mineral and earthy notes. Palate: Sweet agave up front followed by strong minerality that stands out, with a clear wet stone note running through the mid-palate. Finish: Medium and clean, with lingering agave sweetness, soft spice, and an earthy touch that sticks around. Overall Impression: A really solid blanco that leans heavily into agave and minerality. Easy to appreciate neat, especially if you enjoy that classic tahona profile.”

“Aroma: Cooked agave leads the nose, followed by leather and baking spice. Palate: Cooked agave remains front and center, with layered fruit and baking spice. The mizunara influence shows as a soft and subtle oak profile. Finish: Medium finish with gentle vanilla and oak lingering. Overall Impression: I’m a fan of this unique expression that offers a different take on barrel influence through the mizunara oak. It adds complexity without masking the agave, making this an interesting and approachable option for those curious about less traditional cask aging. ”

“Aroma: Cooked agave on the nose with notes of molasses and caramel. Palate: Chocolate leads the palate, followed by cinnamon and caramel. The stout influence adds depth without overwhelming the agave. Finish: Long finish with subtle fruit notes lingering alongside the barrel character. Overall Impression: I love that this reposado adds layers of stout driven richness over an agave forward base. This is perfect for those who appreciate darker, dessert adjacent flavors without excessive sweetness. ”
