“Bottle: Batch 2, LOTE 817, 220426, #CASCAHUINEANDO Appearance: Pale honey-gold x luminous straw Nose: Cooked agave, minerality, wet cement, petrichor, brine/salinity, olive, light oak, barrel spice, roasted almond, butter, vanilla, caramel, cinnamon, citrus, orange peel, fruity, peach, dried apricot, raw honey, and white pepper…in a word, sumptuous Palate: Cooked agave, toasted oak, barrel spice, vanilla, brown butter, dark chocolate, roasted nuts, baking spice, cinnamon, clove, cardamom, citrus, charred pineapple, orange oil, dry earth, brine/salinity, olive, minerality, vegetal, and fresh herbs…a little less sweet, a little more savory, and even slightly green Finish: Cooked agave, honey, black pepper, cinnamon, toasted oak, sawdust, and brine/salinity…extra long and spicy with an oily/viscous mouthfeel Overall: For those who appreciate Cascahuín’s unmistakable profile, this añejo delivers added weight and intensity at 44% ABV while preserving the earthy, mineral-driven character. The barrel influence is rich and expressive without veering into cloying sweetness while simultaneously balancing the savory and vegetal notes with remarkable poise. For the $83 I paid, I’m not sure what else I could ask for; this is simply exceptional. Having never had the 40% expression, maybe one day I’ll get to compare the two. ”

“Bottle: LOT: 030326B4-ART, BOT: 1028 Appearance: Clear Nose: Light green wood smoke, wet earth, minerality, wet cement, petrichor, vegetal, camphor, laurel, citrus, grapefruit, black pepper, olive, and cooked agave…relatively lighter intensity, but really started to open up after some extended time in the glass Palate: Cooked and raw agave, green wood smoke, black pepper, minerality, wet cement, brine/salinity, olive, vegetal, Brussels sprouts, camphor, herbal, sage, mint, thyme, citrus, overripe pomelo, loomi, butter, and honey…an absolute flavor bomb Finish: Cooked agave, mesquite, citrus, black pepper, vegetal, herbal, and alcohol…long and warming/numbing with a thick and oily mouthfeel Overall: For a moment, I thought I had accidentally poured a glass of Don Mateo Alto (made with agave inaequidens and cooked using green/unseasoned wood). It’s such a unique profile that brings together crisp herbs, tart fruit, and the sappy dampness of raw plant material packaged into smokey agave with a fleeting acrid kiss (eg the mesquite I picked up in the finish). Nonetheless, the blue agave honey is present throughout and is unmistakably tequila. This would satisfy fans of tequila and mezcal alike, but would likely overwhelm a novice palate. This is right up my alley, though, and I will for sure be buying more. ”

“Bottle: L 1BL45CT-001, 16/01/2026 Appearance: Clear Nose: Cooked agave, melon, ripe cantaloupe, honeydew, citrus, lime, lemon, fruity, pear, green apple, vegetal, freshly cut grass, parsley, aloe, black pepper, minerality, butter, brine/salinity, and olive…a superbly fruity start Palate: Cooked agave, melon, citrus, lime zest, fruity, Bartlett pear, tropical fruit, underripe pineapple, vegetal, green pepper, cucumber, herbal, lemongrass, dry earth, green peppercorn, minerality, butter, brine/salinity, and olive…distinctive from the nose, but transitions subtly Finish: Cooked agave, melon rind, herbal, citrus pith, alcohol, black pepper, and minerality…long, complex, and evolving with medium to oily viscosity Overall: For how good this is, it’s a shame that distribution is limited to bars and restaurants. As a giant fan of Cambio, I’ve been incredibly fortunate to be able to taste this at length. The combination of flavors and balance gives it considerably more character than would be expected for a blanco in its price range and the quality far exceeds its intended purpose. Although I imagine it would be stellar in a cocktail, I’ve really enjoyed sipping it neat. If you find it, try it. ”

Volcan de Mi Tierra Cristalino Reposado
“Bottle: L025K220296, 14 11 12, 1595, 14/01/2023 Appearance: White honey Nose: Oak, baking spice, cinnamon, clove, fruity, grapes, cherry, mushroom, dry earth, vanilla, dried fruit, dried apricot, fig, citrus, orange peel, alcohol, and cooked agave…a surprising start Palate: Alcohol, oak, black pepper, tobacco, white chocolate, baking spice, cinnamon, vanilla, and cooked agave…hot and slightly harsh Finish: Tobacco, molasses, alcohol, metallic, and a touch of brine/salinity…bitter, hot, and short duration with an oily mouthfeel Overall: I’m not a fan of cristalinos overall, but there have been a few that aren’t terrible and I would consider this one of them. The cooked agave is not front and center at any point, but then I don’t think that’s the point of a cristalino expression anyway. The nose started off in a different direction and actually reminded me of an almost Sauternes-like profile. Then came the disappointment on the palate and finish, which drank more like what I would expect from a cristalino. If this is your thing, you may really like it. ”
